I just read on Wikipedia (not the most reliable source), that Apple has registered "Lynx" and "Cougar" as trademarks, so there are the two big possibilities. I vote for Cougar.

May not be very reliable, but if Apple registered them, must mean something. We're all speculating anyway, but this is a bit of info we can watch.
