How do I transfer all my apps and info from my old iPad/iMac to my new iPad.

For iOS/iPadOS devices, ensure that you are either backing up your device to iCloud or PC/Mac. One you have that, you can setup a new device and then just restore the back up to get everything over.

For Mac to Mac, you can use Migration Assistant to transfer things over.
