I ordered a new iMac and know that there is a transfer utility. I'm wondering if the utility will transfer all pertinent files, including third party software such as Windows Office for Mac and my anti-virus program?

You can transfer everything to your new iMac the first time you start it up and the automatic Migration Assistant appears. It will ask you if you wish to transfer data from another Mac. Use your latest FULL Time Machine backup to transfer all your data. DO NOT create an account on your new iMac! The automatic Migration Assistant will take care of that for you by transferring your old account over to the new iMac.

Is using the time machine backup preferable to hooking up both iMacs with an ethernet cable?

Yes, much faster and safer. I have used the method I pointed out to you now three times going from an older Mac to a brand new one. It has never failed me. As long as you do it right, it's pretty much fail proof.
