Anyone know how to do this? I know you can make a smart playlist that checks for Podcast = True, but there is no way to check if it has been played except with play count, but that doesn't get updated when you start the podcast like the podcast played flag.

Not completely sure, but can't you set the play count to "less than 1" for a play list of new podcasts?
What I do is auto delete played episodes so that it deletes the show from itunes when itunes up dates.
