Do I have to download a program like 'Touch Copy" to my iPhone 8+ in order to print to my Brother computer?

Probably not.

But we cannot tell you how to do it unless you tell us what it is you want to print, from what app, what version of iOS is on the iPhone, what a "Brother computer" is (Maybe you meant a printer? And if so, what is the printer attached to and what are the various details of the operating system version of whatever the printer may be attached to, etc), and how the two (iPhone and Brother "whatever it is" are connected (wired, wireless, WiFi, Bluetooth, other?).

Ok, try this:

I got this from this, at Apple:

Take a screenshot of the instructions, and if you need to, scroll until more shows and keep taking screenshots until you have the entire document. Now you can use Photos to see/print the images, or you can email them to yourself to print from the computer to which the printer is attached.

Now, if the document is actually an attachment to a text message, you may be able to open it directly by tap/hold on it and then print or send it to your email to print it. From your description, it's hard to tell.

1. Confusion on this end. I know how to do a screen shot on a computer, but have no idea how ro do a screen shot of the msg on my iPhone?
2.The instructions assume you have message app enabled on your iPhone.. I can see "messages" under Settings, but how do I get the icon to show on my iPhone?

So what format are the instructions in, I.e. is it a word doc, pdf, etc, or just embedded in the sms, if embedded copy on paste to your favourite app and print.

OK, that is confusing. HOW are you seeing this "message" you are talking about? In your second post, you said:
I want to print instructions I received in text message to the printer
So, if you are seeing text messages, you should have the app from APple, included in IOS, on the iPhone. Or are you using some third party? I'm totally lost now.

Jake you did it your SCREENSHOTS iPHONE8 did the trick! I was able to take a screen shot of the message, so it was a photo. Ccnnected iPhone to computer and transferred the photo to the computer and printed. It.was somewhat faded and hard to read. (uses a lot of toner for the black background.) Changed toner cartridge and came out perfect. T
here probably is a way, in Preview(I?) .to switch to black lettering with white background but that is another question that can wait
