Hello. I am wondering if any DAW or other music production software has the ability to turn my playing at the piano into accurate music notation on my Macbook Pro, both pitch-wise and rhythmically. If so, would I then be able to edit the notation if mistakes in pitch and length were made, etc? ANY HELP APPRECIATED!

Logic, Pro Tools, Sibelius and (I believe) Garageband can convert MIDI data into notation, and yes, you can edit them after recording.
