I did find a writeup, but it's on a hackintosh site, so I won't link to it. Basically, you do the hardware partitioning from the older system as I said, then install into one partition whatever you want as an OS, then into the other partition install Mojave. The Mojave install should reformat the Mojave partition to APFS, leave the other alone. To choose which to boot, hold down Option as it boots and select the one you want.
