How do I turn off, mute or lower audible or even set haptic notifications in the Notification Center in my iPhone and iPad? I know how to set the desired tone/volume or haptic for each app via Settings, but with my phone on the charging stand or iPad laying on the desk at night, the tones from the Notification Center are annoying or even wake me up. That, and use the side button to put the iPhone in silent mode.

Just curious, I don't have or use such iDevices, but is there a built-in schedule one can use to quiet the mouse at normal bedtime and wake up in the morning?

I would have thought such a feature would be mandatory, but one never knows, and may help the OP.

Not sure what you mean by that, Patrick. Do Not Disturb has a schedule that can be set for when to go silent and when to go back to audible alerts. You can also allow some Contacts and some Apps to violate the DND settings so that if, for example, a family member calls, the phone will ring, and if the Weather app, for example, alerts to a dangerous situation (tornado, for exampl), it will alert you.

Check out "Focus".

This is on MBP running macOS Sequoia and is found in all iOS/iPadOS and portable devices.
Custom settings can be created (Add Focus) above are the 4 Focus settings I have but all devices come with a standard set. As you can see the settings can be individually set for each device or "Share across all devices" as I have.
This has been available in one form or another for a few years now, since iOS 16 I think.

I dont have any exceptions set in Sleep but Favourite Contacts (Family) can still make voice calls in an emergency if they call more than twice.

My apologies for my poor description, but your replies have answered my query. Thanks.
