hi, there are so many models to choose from.. and most places where you look it doesn't list the features of each one..
(you see 2 Apple Watches side by side, with very different pricing, and you have no idea why the difference in pricing.....)

I need an Apple Watch that works with iPhone 12...

would appreciate suggestions... thank you...

You're looking at 3 models, SE (cheapest), Series 9 (mid range) and Ultra 2 (expensive).

The SE is $249 and a great way to get into an Apple Watch if you've never had one. The SE has a least brightest display and doesn't have the ECG sensor.

Series 9 is either $399 or $429 depending on the size you choose. It's what most people go with.

Ultra 2 is is $799 and very loaded and would not recommend as your first Watch.

My recommendation is to go with the SE to start with, once you use it and get comfortable for a year or so, then trade it in for the Series 10.

Another price point is GPS vs Cellular. The cellular model requires a service plan, usually under $10 US.

If it helps, I have had two Apple Watches both GPS only SE's. Yes the SE lacks a couple of features included in the current "standard" model and I have never considered the Ultra but value for money it's hard to go past the SE.
Having Cellular simply means the device can run independent of an iPhone. For me I'm pretty much always within Bluetooth or WiFi range of my iPhone so it's not an issue. For example if I'm outside my house and my iPhone rings inside my watch will ring too, I can even answer the call on the watch. Same goes for Messages and just about any iPhone app thats mirrored on the watch. If you get a Cellular model you can literally go out, say shopping, without your iPhone.

This is a large part of why I got the cellular model.

I had been thinking about getting a watch for some time but Mrs. Slydude was reluctant thinking the watch might be obsolete in a year or two. After I took a nasty fall, she decided that fall detection was a good reason to buy the watch. If you've taken a fall, the ability to summon help is great but only useful if you haven't forgotten your phone at home.

I have noticed that the flashlight function and taking calls on the watch can drain the battery faster than you might expect. Short calls are fine though.

EDIT: Mrs. Slydude talked me out of getting one of the higher-end models as a first watch so I got the SE. I don't regret that at all but the next one will likely be a mid or higher-level model depending upon what's out at the time.

And as stated already by Ashwin post #4 once you're familiar with the SE which I think will take at least a year you can always trade up for a AW 9, 10 or current model. Personally I just updated to the next SE because it does everything I want. In addition I chose the smaller 40ml brushed aluminium model, (also the cheapest option) with the silicon solo band which is both the cheapest and most comfortable and practical one I've tried. All up AU$399.00
