All the more reason to stress to new owners/users of a Mac not to opt for the "Add Documents and Desktop Files to iCloud Drive" option in the initial setup until they have read up on, not only Apple's promotional material but problems associated as listed on various forums and multiple articles.

I only ended up with this option accidentally as described in my post on the topic; If you accidentally Synced your Documents and Desktop Folders with iCloud in these forums. Fortunately it was a fairly simple fix. Here are Apple's instructions Add your Desktop and Documents files to iCloud Drive and what they say will happen when you turn off Desktop & Documents;

What happens when you turn off Desktop and Documents​

When you turn off Desktop & Documents Folders, your files stay in iCloud Drive and a new Desktop and Documents folder is created on your Mac in the home folder. You can move files from iCloud Drive to your Mac as you need them, or select all of your files and drag them to the place you want to keep them.
