I am wondering if there is a specific name for the type of keyboard where the keycaps don't sit within a frame (seen here) vs the more traditional "sunken" keycaps (seen here).

Also I'm on a quest for the perfect Cherry MX Blue keyboard with a Mac layout. Any suggestions would be appreciated.

In an ideal world I would have a wireless, RGB, Mac layout, 87 or 104 key setup, and Cherry MX Blues.

I don't think that you are going to find exactly what you want.

However, you mostly seem to want an old-fashioned IBM-type keyboard with raised keys and mechanical action. Lots of folks still pine for those keyboards.
In those old buckling spring keyboards, keys are individually sprung and produce
an assuring sound when you hit the mark correctly. You can still purchase a brand new version of one of these keyboards with a Macintosh configuration.
IBM sold the license to make those keyboards to Lexmark and they in turn sold the license to Unicomp.

Unicomp buckling spring keyboards can be purchased directly from Unicomp:
