Is there a way to collapse all the title carrots with a keyboard shortcut?

When I open up a folder and all the title carrot's are dropped down it's kind of frustrating to click all of them just so I can see the original file structure. Is there any shortcut that prevents this?

Yes, kind of. Option-clicking on the "disclosure triangle" (the proper name) of the parent folder will close (or open) all sub-folders.

No keyboard shortcut I'm aware of and an issue of Finder remembering and opening in the same state you left it in.

Have to either start closing them when you're done looking in the folders, restart Finder or re-boot your machine (logging out will probably do it also).

I deal with it most of the time when I'm in list view by not clicking on that triangle and instead double click on the folder and then use the back button when I'm done in that folder.
