I have a high end MacBook Pro from 2020. How can I tell what resolution the webcam video records at? Is this webcam good enough to do high quality YouTube videos with?

Failing that, make a short video, open it with Quicktime and look in the Movie Inspector.

It is a 720p Facetime HD Camera. I have found quality is in the eye of the beholder. But for YouTube is might be fine.

Try what MightGem said: make a short video and see what you get in the way of quality and see if that is what you want.
