Colloquy gets my vote - can be made to look very uncluttered (hide the drawer and the toolbar). That said I'm no power IRC user (been using it long enough though!) Before Colloquy I used X-Chat Aqua and on my old Macs I used Ircle.

IRC on Macs

Currently using Minerva since it is free, and about the only thing I can get to run on my old PowerPC G3. I'm in love with old Macs. Up until last year I had a Performa 6200CD, that was given to me by a friend in Tupelo, Mississippi, about 5 years before. I ran Ircle on their just like Vicky. I'm coming off years of using Windows based PCs. For the must part I used mIRC, then I switched from Windows to Fedora with KDE and started using Konversation. When I married my wife, she was in college and needed to use the computer for some classes. She not knowing much about Linux, I switched back to Windows XP Professional. I then took the Konversation source code and finally after some tweaking it got it to compile with my only legal copy of Microsoft Visual Studio 6 Professional. I used it forever. Then KDE 4 Windows was released. The Konversation found there was up dated, so I dropped my Windows version and started using KDE 4 Windows version of Konversation.
