It seems a no-brainer to me but, why can't I access iOS apps on my iMac? For example, I have something I would like to put in my Apple Wallet. I have to email it to myself and then transfer it to the Wallet on my phone.

Accessing IOS apps on a Mac is possible but there are certain caveats:
1. Only certain Macs support this possibility (not possible on Intel Macs)
2. The developer of the IOS app has to support this option

If you are asking, can you have the Wallet App on your Mac then the answer is no. With the new Silicon Macs you can run some iOS apps but they are limited by missing functions on a computer like a camera with built in bar scanner.
