I need to copy a complete APFS volume from an HDD to an SDD

Google has not been my friend. I don't even know if this is possible. I need to copy all but one volume in an APFS container on an HDD to a container on an SDD. Apparently I could use Disk Utility to copy [clone] the entire container but not everything but one volume. The volume I don't want to copy is bigger than all the others combined so copying everything and then deleting one isn't an option. I can also use SD! to copy one volume at a time. What I want to do is select all but one volume on one drive and drag and drop them to the other drive. Is there a way to do that?

Are the volumes you want to copy mounted on your Mac? If so, on the new drive create new volumes with names you want, mount the new volumes, then just copy and paste the entire volume to them from the old volumes to the volume you want them to be on and wait. It may take quite a while, but Finder should show progress bars for all three as the copy over.

Or maybe I misunderstand what you want to do?

I can't select the volume itself. I can only select the contents of the volume. If it is a matter of doing one volume at a time I think I can use Disk Utility's Restore function.

On one disk I have six volumes in one container and I want to copy all but one of those [5 volumes] at once if that is possible. If it isn't I can do one at a time. I'm just trying to find a way around that.

OK, do it this way. Open each old volume to the root of the volume. Click on the Select All option in the Edit menu, then click Edit again and Copy. You should then be advised that you have selected X items to copy. Now open the destination Volume that you created in the new Container and Edit/Paste X items and everything will be copied from the old Volume to the new.

I could bring wrong but wouldn't that pretty much do the same thing as the restore function in Disk Utility?
