So I've got all documents backed up to external drive via TM now, how do I backup my Sierra operating system before taking on High Sierra?

Time machine will back up the OS by default unless it is told to ignore some folders. My preferred method for backing up the OS involves using "cloning" software such as Carbon Copy Cloner or SuperDuper. Either program can make a bootable clone of the system as well as perform a variety of backup tasks.

You're welcome. Carbon Copy Cloner is a paid program but you can try all of the features during the trial period. I don't remember if SuperDuper is a paid program but again I think all features can be tested.

Edit: I should note that under the right circumstances Time Machine backups can be bootable. See this thread for more backup-relatreed questions / options -- especially post #8 by member Randy B. Singer.
