formats for replying to email in entourage

Hi

Can anyone let me know how to best format replies in entourage?
What I mean is to change default settings (if possible), so that replies are easy to follow who's saying what. Eg:

[bill] jfklflsdjfjdlsjflfjlsdjfljdlsjfljsdjflsd

>>[ben] dskdlsk;dskks;dsld

[bill] fefjeowjfojweofjowjfojwefjw

How to reply to emails within the body of the sender's text but able to see my reply formatted differently to theirs.
