FINDER preferences for SAVING files

Hi folks! - In OSX Mavericks, how can I set Finder to automatically SAVE files in a folder of my choosing?

Its very odd, but sometimes the FINDER remembers (without me having to do anything) and other times it does not... I have been using a particular folder to save stuff over 3 weeks straight but FINDER always takes me back to an older now defunct folder... Needless to say this is very frustrating and I would love to improve my workflow! Thanks

The default action is to save in the last folder used. However, sometimes that doesn't work properly.
There is an app named, oddly enough, Default Folder which might help. Little expensive at $32 but some people swear by it. Does other things too.
