Starting with my favourite and counting down to least favourite, mine are:
Unified
Aqua
Pro
Brushed Metal

I hate Brushed Metal to the point of not using Safari because it uses Brushed Metal. I like the 'smoothness' of Unified, because Aqua seems to have too many bars seperating things. Pro is really cool also. I like them all, except I HATE Brushed Metal.

I must admit, I really don't care for the look of the Pro apps...

I must fay I like them in this order:

Aqua
Pro
Unified
Brushed Metal

I'm not a fan of the bottom 3. They to me are like I use what's given to me. Cause even they are way better prettier tham the competition (Yes VISTA that's you). But I think Aqua has a nice look. Like a look updated and edited from the old OS 8 days. I really liked that look back in the day. And Aqua I like too. It's simple but everything is clearly defined. Sure the seperator bars might annoy some people but they're ok for me.

Smurfy doesn't mean actual themes you can select for the entire OS, he's talking about the different window styles you see in OS X.

Safari for instance uses the 'Brushed Metal' theme, iTunes 7 uses the 'unified' theme, Preview uses the Aqua theme etc,.

Here's a list of examples:
Brushed Metal: Safari
Pro: GarageBand
Aqua: System Preferences
Unified: Mail

Um... System Preferences uses Unified, actually. (both the toolbar area and the titlebar can be dragged to move the window)

Preview is an app that uses Aqua. (you cannot move the window around by dragging the toolbar)

I don't care, really...just pick one! Why does every application have different controls, rules and behaviors? We never needed that under the Classic Mac OS.

If I wanted to have fifteen different breeds of applications, I'd run Linux. :)

I love Brushed Metal. I hope that they'd release an update (no, not Leopard) that makes you use themes like in Windows.

I want to be able to choose in between all themes. But I prefer it in this order:
Brushed Metal
Pro
Unified
Aqua
