disk utility

I have been using mojave disk utility to erase usb drives...i do the 3 pass method and then it formats on its own into ext journaled. I guess this is a common mac format but fat32 works too. I have my ubuntu usb drive fat32 and it loaded fine.The disk utility menu has erase,partition,restore,unmount etc but I dont see format.
I used my PC Gparted utility to format.If mac disk utility has a format option ,where is it?

@456, the reason it "formats on its own into ext journaled" is that format is what you selected. Or better, you left it as the default. Here is the box that Mojave pops up when you select a USB stick and then "erase"

Where it shows the present format, the up and down arrows indicate other options. Click in that box, select what you want and as it erases, it will format the USB to that format. The reason that FAT-32 is grey is that the current format of that USB stick is FAT-32, so it's no change if I leave it as is and click on "Erase."
