Taco is spelt taco, whereas, Tahoe is spelt Tahoe ;)
I suppose my dry humour isn't always “got”! My comment was just a reflection that Apple’s Big Cats were things almost everyone had heard of, whereas uber-obscure California place names have absolutely no resonance outside the States.

Well, for those 'not in the know', Lake Tahoe straddles the Nevada-California border and is a large and deep freshwater lake famous for many activities including winter sports - wife and I have been there several times - a boat ride is beautiful. Dave :)

Of all the Mac OS California place names, the only ones I'd ever heard of were Monterey (due to a certain very famous pop festival), and Big Sur (but only once - it was mentioned in a Beach Boys song).

As for ‘taco’ and ‘Tahoe’, that was an even more obscure reference to those many who insisted on spelling Mojave as ‘Mohave’ (yes I do know how it’s pronounced…).
