Problem Solved! I took a couple of my biggest libraries (Music, videos) and separately copied them to the external back up drive. After they had been successfully copied, I deleted them off of my home folder. Once enough space had free up to turn fire vault off, I turned it off and re-copied the files onto my original home folder and ran a back up which allowed me to finally bring over my whole account to the new HDD.

Moral of the story kids, don't use fire vault unless you know what you are doing, and you really want to hide something, otherwise, it's just not worth it.
