On my computer at "About This Mac" is iMac>MacOS Ventura 13.7.2 (22H313)

This morning I noticed at Launchpad "Install MacOS Sierra". I have no idea how long that has been there. I can't remember the last time I opened Lauchpad.

As you can see in the attached photo, there is an arrow presumably urging me to install MacOS Sierra.

I am confused.

Should I click on "Install MacOS Sierra"?

Ventura is macOS 13, Sierra is macOS 10.12. Sierra is six versions of the OS older than Ventura. So, no, you SHOULD NOT click on Install Sierra.

Your 2017 iMac can run Sierra. In fact, Sierra is the oldest version of the Mac OS that your 2017 iMac can run. But it's a quite old operating system at this point, and you already have a fairly recent version of the Mac OS installed.

My thought is that you still have the installer app for the original OS installed on the device for some reason, probably lost in time now. Normally the installer is erased after installation of the OS so it seems it was never used. You should also find it in the Applications folder. It can be safely erased if you need space.

No, I doubt that you want to downgrade your OS when you are 7 iterations above that release. If you follow the suggestion above, that might remove this from your Launchpad. I've never used that, so I could be mistaken.

It looks to me from your screenshot that VueScan - not the system itself - is asking you to update your OS to the minimum it now needs in order to run? Not sure why...

No, that's a cropped screenshot of Launchpad with all the applications listed.

Thank you all.
Checking (deleting) this morning at Finder>Go>Applications, "Install MacOS Sierra" has been there since October 17, 2018.

To "remove it to trash" Finder wants a password. I have entered every password I have used on this Mac, and apparently none is correct. Is there a way for me to change that password to something else?

Finder wants a password.

Normally, that would be the Password you use as the Admin on your Mac. The same PW you might be asked when you shut down the Mac and then restart it.

Try this. Put the installer that you want to delete into a new folder. Create a file in TextEdit with any content that you like, and give it the exact same name as the installer in the folder and save it. Drag the TextEdit file onto the folder that the installer is in. When asked if you want to replace the file already in the folder with the TextEdit file, say "yes." The Installer file will be deleted.

If that doesn't work, you can easily delete the installer file using the Terminal.

A few minutes ago, after having more or less given up, I googled "how to change lost iMac password" and that did it.

As always, thank you all for being here! It truly is a relief to know — for me and undoubtedly numerous others — that Mac-wise, we are not alone.

We have all been there before and, indeed, some of us find that a problem occurs which we cannot solve alone, even now.
