Using more than 1 monitor

I have a mid 2010 Mac Pro with ATI Radeon 5870 Graphics card running Yosemite. I have 2 monitors attached, 1 Apple Cinema display , connected vis DVJ port, and 1 Hanns-G AVG connected vie one of the mini display ports. Is there anyway I can setup a default display and stop the OS switching arbitrarily even when the display is turned off?

2011 17" MBP 2.2ghz, 16gig ram, OS 10.11.6
I would say best practice would be:

- If you need two displays…then attach two displays & have them both powered on.
- If you only need one display…then disconnect the non-needed display from the computer.

By having two monitors attached…and sometimes both powered on…and sometimes only one powered on…you're just "confusing" the computer.
