I have new WD Blue 1TB Sata drive, and if I connect it to my Mini with a USB 3.0 hookup, after a little while, first the WiFi dies, then the whole computer reboots.
However - if I connect the drive via a USB 2.0 connection, it carries on fine.
Has anyone seen this behaviour before? Or do I just have a faulty drive right out of the box...

If the drive is Bus powered, perhaps it is drawing too much power from the Mini.

I would suspect a defective drive if it works via USB 2 and other USB 3 devices work OK with your Mini. Have you tested with another USB 3 device? (WD has a 3 year warranty on their drives or you may be able to return it from where you purchased it from.)
