Save to two drives at the same time....

and not raid1?

Is this possible or can someone recommend a good software package to do timed incremental backups, like at 5 or 10 min intervals?

Checkout backupList+. It does incremental backups you can set by the minute and will let you set up several backup lists that can go to different drives or folders.

Because its hourly. I would prefer instantaneously but every 5 mins will be ok.

Maybe you could use time machine editor, to change time machines settings. I used this a while back to achieve the opposite of what you want and it worked ok. Don't see any reason why it wouldn't work
