Safari history the same on every device

Does Safari/iCloud save your history from your iPhone all the way to a MacBook? If so, how to change it so they’re separate?

Safari uses iCloud to keep your browsing history the same on all your Mac computers and iOS devices that have Safari turned on in iCloud preferences.

In response to your second question:
If so, how to change it so they’re separate?

On both your devices, iPhone and iMac, go into iCloud preferences and turn off or uncheck "Safari".
