replies sorted in mail vs. outlook 2003

in outlook 2003 when I replied to an email it automatically placed the reply in the same folder as the one where the original email arrived (based on rules). in mail, it seems I have to create a new rule not just for every incoming email but for every outgoing email as well.

any thoughts - work arounds?

I am a new mac person and am VERY frustrated with mail, ical, contacts. I loved outlook 2003 - and can't figure out why microsoft didn't make entourage exactly like it? entourage is terrible.
