Is it possible, through iCloud, to view any installed apps that have been put on that particular phone. At this point, all we can see (where I work) is the location of the device, Can you view installed apps remotely, and how?

You can view installed Apps on an iPhone by opening iTunes, selecting the iPhone in question, and then selecting Apps. However, the iPhone in question has to be on the air at the time and within range of your network for you to view what Apps are installed on it. You can not view what Apps are installed from "Find my iPhone".

Way... way too many specs to list.
You'd need some sort of Enterprise provisioning software system for what you want, I believe.
