I used this one a little through Safari Books Online:

MacAddict Making Music with GARAGEBAND by Jay Shaffer, Gary Rosenzweig

It told me how to access the basic MIDI sounds through GarageBand. I really wanted a harpsichord on my MIDI keyboard, and this book told me how to do it.
