OS X Server permissions

I thought OS X Server would allow an Admin to see hidden directories (var, etc, usr) but logging into my xserve (as admin) just shows me the standard 5-6 directories and keeps me locked out of directories I need to get into... only way is to log back in as root... but I didn't think running the box permanently logged in as root was a great idea.

Shouldn't a server Admin be able to go into /var/cron and modify stuff without logging back in as root?

In most cases the Admin can run root permissions but with Admin password promt. When that can't be done or other functions that forces loggin as root, just do it offline! That's what I do. That is all
