I just created a test document in Pages, and was able to use Quick Look to view it with no problem. I'm not sure why you would not be able to. Sorry I can't help with the problem.
HD/Users/YourUserName/Library/Preferences/com.apple.QuickLookDaemon.plist
could be corrupt.
Move it to the Desktop, then try QuickLook.
If no change, Restart, then try again.
If no change, that wasn't the problem, so try a different user account.
I am not familiar with adding other users on my Mac, since I'm the only one using it. If I open another account, will I be able to access the document I created in this account?
I just used my Macbook to access my iMac, and I can do a QuickLook from there but not here (my iMac).
No harm is done with having a spare Admin User account as it can be used to help with troubleshooting as in this case. Go into Sys Prefs > Accounts and click the + below left pane then add account and enable fast user switching - how you do it depends on 10.5 or 10.6. Then open pages and create a new doc - save it and then select file in finder and try Quick Look. If it works then you know the issue is in your User area.
OP already tried that plist file and it did not change anything.

What version of OSX are we talking about? (sorry if I missed that)
Maybe you should download the combo updater and do an archive and install, even if it's the same update you've already applied.
