Here's a list of freeware apps that I use frequently and find them useful.
Adium: a chat program that allows users to connect through many different accounts such as MSN, AOL, Gtalk, Jabber, ICQ, and many others http://www.adium.com
VLC (Video Lan Client): Great video player that plays nearly all video formats including WMA, ISO, MOV, AVI, MP4 http://www.videolan.org/vlc/
Opera or Camino: I personally like both of them just as much. They are clean and quite fast. http://www.opera.com or http://www.caminobrowser.org/
NeoOffice: A great Office suite if you can't afford Microsoft Office for Mac. Office for Mac is usually faster and more stable but it also costs money. Neooffice does a sufficient job for an alternative to office http://www.neooffice.org
GimpShop: This is also a good alternative to Photoshop. Again, Gimpshop isn't as good, but it is very well done. http://www.gimpshop.net
Desktop Manager: Great way to have multiple desktops for your mac. http://desktopmanager.berlios.de/
Cyberduck: A great FTP or sFTP client. Which again is free. http://cyberduck.ch/
Handbrake: An easy way to rip your DVD collection to your harddrive. http://handbrake.m0k.org/
iBackup: An very easy way to back up your files to an external harddrive. http://www.grapefruit.ch/iBackup/
More to come...
