Does anybody know if I can use the mini DVI socket to plug an Xbox 360 into it using the DVI to mini DVI convertor?

Sorry, you can't without using an Elgato solution or a Miglia. Google them to find out more.

No: The mini DVI socket is a display output only: It can send a video signal to another display - it can't input a video signal to your iMac.

But check out 3rd party TV tuner accessories with a "game" passthrough function.
