I suspect the reason for the difference is that in IOS it takes two taps to make a capital letter, so they "automated" it there. But the level of effort to use shift on a keyboard is not as aggravating as having to tap twice on a tiny screen (think iPhone, not iPad). And as an aside, IF Apple does adopt some sort of automatic capital on first letter, I'll start a protest movement against it. I happen to like the control of using the shift key to accomplish that simple task when -I- want it, not when Apple thinks it's appropriate. One major reason is that is in IOS, although initial caps are sometimes nice, try entering two caps at the front of a sentence, or in the middle even. For a certain function in my church I abbreviate Community Group as CG in emails a lot, and that auto-cap function insists on making it Cg at the front of the sentence or Cgs for plural anywhere. It seems Apple decided that if you use ALL upper case in the middle of a sentence, it's fine, but if you try to add that "s" to make it plural, CGs is totally unacceptable. Very annoying.
