Hi, I'd like to know which version of the id3 tag is itunes reading (windows and mac)?

Is it 1.0, 1.1, 2.1, 2.2, 2.3???

It will read any of them. Each version added new tags, all of which iTunes will recognize and read. iTunes itself does ID3 2.4 IIRC.

If you go ADVANCED > CONVERT ID3 TAGS you can update your files to any version.
