How to access HD folders when opening/saving files?

I'm an OS-X and MacBook newbie.
I keep running into this frustrating issue with a number of applications:
When trying to open files in various apps (e.g. photo editing), the only file location options shown are:
- Media>Photos (i.e. iPhotos, which I don't want to use)
- Favourites (shows me Applications, Documents, Downloads....)

However, I keep my files in the folders on the HD, which, as well as Documents, Downloads etc, also include Music, Videos, Photos.

In some apps (e.g. Photoshop) I can directly access the full list of folder options on the HD

But in some apps (e.g. Tonality) I only get the limited options list.

How can I force these apps to reference the HD?

If I'm understanding your dilemma correctly, the solution is simple. In the Open/Save dialog box, click the "disclosure triangle" next to the name of the file. That will expand the window to allow you to browse to any folder.
