How can I make Stiffit Expander the default?

iMac: 5K 27” (2020), 3.3 GHz, 32Gb RAM. iPad 2025, iPhone 13 Mini, Apple Watch SE
Since upgrading to 10.5 Archive Utility has become the default program to unpack Zip files. Nothing I seem to try will make Stuffit Expander the default. Archive utility annoyingly leaves open an extra Finder window, so how can I revert to Stuffit Expander as my default?

2015 Retina 4K iMac. Monterey. 8GB RAM. Crucial 500GB external SSD
click the zip file and choose file> get info

change where it says Open with to the app of your choice.

Thanks macgig. 'File', 'Always Open With' just did not do 'what it said on the box'!
