Getting OS 8.1.2 off of my iPhone 5

I just downloaded 8.1.2 onto my phone and I am not ok with the privacy issues to enable dictation for email/texting. Is there any way I can get it off my phone and back to my old OS or get around "the things you say will be recorded and sent to Apple?"

Did you make a backup of your former version of iOS before updating to 8.1.2? If you have a backup you can restore from that. If you neglected to make a backup, you'll have to live with 8.1.2 because Apple quit signing version 7.X.

As for the privacy issue, you can turn off sending information to Apple if you wish.

Yes, just disable the dictation and voila, no recordings sent to Apple (they only use it to help improve accuracy, and it is end-to-end encrypted, but if you don't want it you can just turn it off).

Thanks for taking the time to respond. I don't know if my backup fully went through. (I'm having other issues). I use the dictation feature incessantly. I have read that there is some software that you can download to be able to use that feature internally and not be sending info to apple.

Thoughts?
