I've seen a bunch of installation videos on replacing a hard drive in the macbook pro with a regular hard drive or an SSD and they seem straightforward, remove the screws, unplug sata cable, replace drive, and boot up to install new OS with good internet connection. Does this apply to hybrid drives? Once installed, do I need a special software to help the OS run on them?

No. Just do the same as you would with any other drive whether it be a spinner or SSD.
