Ian is correct, up to a point. The system is supposed to merge the two Volumes into one, named Macintosh HD, with four folders inside, /System, /Library, /Applications, and /Users. The first three are on the protected disk and the fourth is where you can read and write and in which you find your Home folder (The one with your name and a house icon in Finder). So you should NOT see two Volumes on the desktop, just one. Is this new Mac truly new, or just new-to-you? If you got it from someone else, they may have messed with the OS and created this mess. You really don't want to have those two visible on the desktop. It can, and most likely will, lead to issues down the road. If it's a used system, I would suggest a fresh install of macOS from Apple. But let us know whether or not it's brand new or used and we can give better advice. In general, it is always much better to reinstall the OS on any used system. That way you know beyond any doubt that the previous user didn't leave behind anything you don't want.
