Just curious, what is the extension of the files you want to convert? MP4? .m4a?

All will convert in iTunes. Just open Preferences, Advanced and click on the Importing Tab. Click where it says Import using and select your encoder. You can select the bitrate there also for your MP3. Then Right Click on the songs in iTunes and select "Convert Selection to MP3"

itunes:

Preferences> Advanced> Importing
[ ] Import using Mp3 Encoder

Now, when you highlight a song in itunes,
Menubar > Advanced> Convert Selection to Mp3

if you wanted to make it .WAV, or Apple Lossless, You'd just need to change the first step.

For Garageband, there is no direct way to export the audio in MP3 format. You need to convert it after exporting. I think Switch does a pretty good job.
