Log into your wireless router and there should be an option under the wireless settings to change the channel. The iBook shouldn't require any extra configuration.

In general a wireless access point uses the channel it is set on and 2 additional channels up and down the spectrum. So a WAP on channel 6 will broadcast in the range from 4 to 8. So, for the sake of neighborly love, 3 access points near each other should be set at 1, 6, and 11 so that they do not overlap.

Connect to the configuration of your access point and there should be something in there to set the channel. I would take a quick snoop with iStumbler to figure out what channels are currently being used in your area and move your access point accordingly.
