Can't unpair Apple Watch

I have followed the procedure to unpair watch series 3 from iPhone 11, after many attempts frustratingly I am presented again with the Pair watch screen.
Any help in this matter will be gratefully received

You get the "Pair Watch" screen when the Watch is not paired to an iPhone.

What is it you are trying to do?

If you followed the "unpair" instructions, it ends with tapping the little i within a circle; then tap "Confirm Unpair" then it requires you enter your Apple ID username & PW. That is the final part of the unpair process.

Thereafter, you will see the "Pair Watch" sign if you have successfully unpaired it - because it's one or the other.

May I ask you to confirm that you did get to the end of the Unpair process ie the request to enter your Apple ID and that you did that, please?
