i have heard that if you run xp with parallels, its best to have 2 gigs of ram so each OS has a gig. what about bootcamp... i would only be running one OS at a time, so 1 Gig of Ram Should be fine right?

1GB is fine for Vista also. With Vista booted, and nothing else running, it will use around 500mb of ram. You should be ok, as long as you dont have too much stuff open.
