My Apple I.D is my old e-mail address. If I change my e-mail address do I need to change my Apple ID with the new address or is the I.D.just whatever you make up at the time and using your e-mail is a convenient way.

You can continue to use a closed email address (account) as your Apple ID but it is better for contact and perhaps security reasons to use an active or Apple email account.
I used to have a @gmail.com account because when I set up my Apple ID it was the only email account I had and iCloud did not yet exist.
I changed to an @icloud.com account a year or so ago.
I did have to re enter my user login on all devices so be prepared for that.

You should keep your Apple ID, and just change the contact email address.

I highly recommend you follow Bob's advice above. Changing your Apple ID can lead to major headaches and possibly locking you out of your devices. In other words, don't do it unless absolutely necessary.
