Welcome to the right side! Yup. You have to empty the trash to make the file go away and make that hard drive space available.

Not quite, since on the Mac you also have to empty trash to free up space on a USB memory stick (or a digital camera) which is something that is very easy to forget...

So your saying if I delete files from my usb drive and then eject the drive without deleting the files from the trash then they will still be on the usb drive?

Yup. The metaphor is exactly the same, it is consistent with the Finder's behavior and all email programs that I know of. If you put a file in the Trash, it stays in the Trash. Until you empty the Trash. Then it is gone.
In fact, it is the same metaphor for trash day across the world. You put garbage into a trash can and there it stays. Until it gets emptied!

how can i delete some, not all, of the items in the trash can?

I have a folder on my Desktop called Pre-Trash that I put stuff in when I haven't quite made up my mind on trashing it.
