Am I able to upgrade my Windows version once I've installed it via bootcamp?
Seeing as my mac autosuggests that I install windows 7 on the second step of bootcamp, I was wondering if I'm able to update my Windows OS once it has been installed.

What Mac? Windows 7 is really old and I would NOT recommend you install it. Nothing other than Windows 10 should be installed. The right Mac (and macOS) and Boot Camp drivers are needed to run Windows 10. To properly run Windows on a Mac, the Boot Camp drivers are needed to give you access/support to the Mac hardware and that is your limiting factor as to what OS you can install and how far you can upgrade.
