How did I get these and how can I stop seeing them....

I think of my self as moderately knowledgeable about using Macs. But two popups are literally going to drive me senseless. One has been around for over a year. The other is new and unlike the first one, I have no idea how or why it has decided to grace my monitor with its presence.

See attachments below (sorry they came up so huge, mea culpa)

Popup #1: I know the source of this. It is Java. I have written to Java several times to ask how I can rid myself of this and have not yet received a reply.

Popup #2: Script editor. Never used it that I am aware of but something I did brought this to me.
Question: How do I rid myself of these repeating and unwanted pop-ups?

Thanks in advance for your assistance.

The first message is NOT coming from Oracle, but rather macOS telling you that you need to install the JDK/JRE for a Java application you are trying to run. If you click More Info, a browser window/tab will be opened to the Oracle download page. If you don't want to do that, don't use the application that needs Java.

For the second message, the [SH]ell is sitting in /bin/sh. So if you are not referencing it from that location, you'll get that error. So look at the script and modify it to fix that issue.

The JDK issue is most likely due to the fact that like my wife you have not done a clean install of your Operating System for a long time. As a result an older version of Java still exists on your device. I have tried completely removing Java from my wife's MacBook Pro without success but I did find a solution:

Here is the answer for the first popup. https://www.theitsage.com/fix-java-command-line-tool-popup-mac/

This site also gives an explanation of why you are getting this popup.
I followed the instructions, installed the "Java for OS X 2017-001 aka Apple’s version of Legacy Java Command-line tool" and she has not had this problem since.
As with all such advice i recommend you first perform a backup of your device just in case of problems.
